Hunter began his barista career around 2012, as third-wave coffee was gaining momentum in Japan. Wanting to learn and try latte art, he went on to build experience at leading specialty coffee shops including Sarutahiko Coffee, Streamer Coffee Company, and Verve Coffee Roasters. At Coffee Hub, he is shaping a space where guests can relax, work, and want to return for another cup. For Hunter, a cup of coffee is not just a drink, but a chance to leave an impression. He brings his accumulated knowledge and skill into coffee that is not for himself, but for everyone who wants to drink it, keeping the guest experience at the center of both brewing and service.

David discovered coffee culture in San Francisco and refined his roasting craft at shops including Four Barrel Coffee. After running his own cafe in Japan, he now serves as a roaster for Over Coffee Hub. He approaches roasting as both science and art, drawing out each bean's natural character while valuing excellent quality and warm human connection through coffee.

Tetsuya's roasting story began when he was moved by the story of Abonzo Coffee Farm in Chiang Rai, Thailand, and sensed that coffee could make people happy. As a roaster for Over Coffee Hub, he incorporates Thai beans into the blend and roasts with a prayer that each cup blesses both producers and guests. Through coffee, he hopes to communicate the message: you are wonderful.

Tokyo Coffee Roastery Cafe roasts around the theme of renewal and connection, pursuing the fullest expression of organic coffee beans. Their experience dismantling and rebuilding their own shop shaped a philosophy of listening to materials, which now carries into roasting. They value the background, origin, and story behind every bean. Their goal is not only to make delicious coffee, but to create a warm cycle that connects communities, producers, and guests.
